    I loved this recipe I normally don't like goat cheese, so I added some sharp Cheddar. It added and accented the goat cheese. It ended up being a great combo.
    This is an easy and quick hearty breakfast that everyone in my family loved even the picky ones.

    This recipe is a great idea - not just for breakfast, but for dinner too. I am always looking for easy, healthy, and yummy recipes to cook on the nights where I don't have much time (or am too lazy to cook something more laborious. This fits the bill.

    It is also pretty versatile, which I love. You can add/swap out lots of different ingredients. For my first try, I:
    - Used less goat cheese and only 4 eggs
    - Used more spinach - love spinach
    - Added some potatoes
    - Used chicken sausage instead of turkey (it was what I could find
    - Omitted the basil (because I didn't have fresh in the house
    - Didn't add the "croutons" to the bake. Instead, I made crostini and served it along with the bake.

    Next time, I think I'll try this with greens (collard, mustard, etc., instead of spinach for a hardier flavor. I'll also use a different cheese - I am not a huge fan of goat cheese.

    I really liked this recipe, every tasty. I think it can serve more than 6. I made it the night before, instead of getting up early. The recipe worked out really well. I may have used a few more pieces of cubed bread on top, and I used only 4oz of the goat cheese but my husband loved it. My kids were more interested in cereal, so I have left overs. It would be a nice dish to make if you have overnight guests, or if you are attending a brunch. Happy cooking!

    I also made this one today for our brunch, When reading this, I thought it screamed for some potatoes so I cubed 4 good size russets and roasted them with olive oil and salt and pepper too. I layered them in under the bread. We all loved it!

    Loved this recipe, but I didn't have bread, and we are trying to cut down on glutton, so I used cubed hashbrowns. Didn't have goat cheese so we used a mexican conqueso cheese. It was yummy, my husband told me three time at the table this was a keeper. Thanks Giada!

    Hubby & I made this for breakfast this morning - no substitutions - it is delicious!

    * For our personal tastes, we would add a quite a bit more basil
    * Because ovens are different, we rotated the casserole halfway through for more even baking
    * The croutons did come dangerously close to burned so, we will reduce the initial "toasting" time by a few minutes next time - and there WILL be a 'next time'!!!

    In my opinion, the goat cheese 'makes' this dish - adds a tangy contrast that is just incredible. Make this casserole - if the ingredient list interests you, you will not be disappointed.

    I used many substitutions and it worked great. I used regular breakfast sausage, and instead of sun dried tomatoes, I used some jarred red pepper chopped. I also threw in some sautéed mushrooms that I had on hand. Also, used pesto instead of fresh basil. I did not have goat cheese, so I used fresh mozzarella. I noted what one reviewer said about the bread crumbs, and lightly toasted them so they were not too dry in the end. The bake time on this was well over 20 minutes to cook the eggs still soft in the middle. It was delicious!
