We live in a rural area, so sometimes I find that I have to substitute ingredients. I used regular sausage and seasoned it myself with fennel seed and italian seasonings. We didn't have fresh basil, so I used dried instead. Also, I used the sun-dried tomatoes that come in a package in the produce section, frozen spinach, and feta cheese with those fat-free scrambled egg whites and made it fritatta style instead - delicious. Because of the fritatta style they cooked about a half-hour. Also, I'm gluten free, so my hubby got the bread cubes & mine without, but either way it was good.
