Excellent Recipe. The only changes I made was I used my own sauce, and I used more eggplant. I put at least 3 slices of eggplant on the chicken. Have made this several times and will continue to make it. It gets 5 stars.

This was delicious! I added a few spices to the can of tomatoes but that's it. Great recipe!

I made this recipe last night and it was ABSOLUTELY DE-LISH! I added some roasted garlic and dry italian spices to the crushed tomato however, and also used panko bread crumbs instead of the cereal (which i thought helped to keep some of the crispiness of the chicken... But apart from that this recipe rocks! Thanks!

I really LOVED this!! I love Italian food -- my husband does not, but he actually liked this. I think that he was surprised at how tasty the eggplant was. I, too, found it necessary to "garlic up" the crushed tomatoes!!

I made this over the weekend and it was great!
I usually follow recipes to the letter the first time I make them, but I could not leave that can of tomatoes alone : I simply added a few chopped garlic cloves and a splash of red wine.
(If you have a Penzey's Spices nearby the Tuscan Sunset was great sub for Itallian seasoning
