I love this recipe!!! Easy, healthy and delicious. I follow exactly except if I am out of shallots red onions work ok. Would be a great side dish for a summer picnic/BBQ.

This was delicious!! I made it for my Midwestern parents and the kale brought back fond memories. I used packaged baby kale but cooked my own lentils. I think I'm gonna try dried blueberries next time, just to add more superfoods to it!!!

This was really good! I also used pre-wash kale and cooked green lentils which made it real easy. I didn't have champagne vinegar but used raspberry vinegar instead. The cranberries and feta made it decadent. ITs been in the fridge for 3 days now- I nibble on it each day- I think it might be getting better!

I wanted to make this for a casual potluck at a friend's house, but didn't have quite the right ingredients on hand, and couldn't motivate to go to the store, so I used what I had & it turned out even better than I could have hoped!

    Here's what I did instead:
No lentils at home, so I toasted some pecans
Used goat cheese & dried cherries
Used aged balsamic & horseradish mustard, then lightened that with fresh lime juice in the dressing
Left out the shallots since my friend is anti-onion :

So basically I changed most of it and just used this as an inspiration point, but one day I'll try it as intended. Oh, and you know a salad is a winner when people just walk by & start eating it without utensils, and it all disappears before it makes it to a plate!

Love this! Reminds me of a salad I do with quinoa and kale.

This is an amazing salad that's not only tasty but good for you. I bought a bag of pre-washed kale and already cooked lentils in the store, so it was really easy to put together. I'll be making this on a regular basis.

Easy, nutritional and everyone loved this salad...I served it cold did not steam kale like you did on your show January 14, 2012. This will be a favorite family salad and be known as our "Salad of 2012"! I watched your show for the first time and LOVED it...you're both a blast and the other recipes will be made soon! Thanks!

So Tasty!!!! This is a beautiful, healthy salad that really holds up. I ate it with a few sliced strawberries on the side and they added a little more sweetness that I thought paired nicely. I will definitely make this again and bring it to get togethers!!
