The name for this recipe is perfect. The coconut milk gives a background of coconut, so it is not overpowering. It went very nice with the Chicken Curry. I will definitely make this again. Next time I will try it with Basmati of Jasmine rice.

This was very tasty! And it was also very simple to make--I didn't have a rice cooker, so I made it on the stovetop.

Yum. I used long grain basmati brown rice to up the fiber content. Made it with the chicken curry, and it definitely added depth of flavor. I didn't have a rice cooker so I made it in a dutch oven.

Great tasting rice. Made with Melissa's Easy Chicken Curry with vegetables recipe. Perfect complement to the dish. Very good!!!!

Wow! I have made this rice four times, and it has been very,very good. My husband and I use it alot. MY rice cooker is like magic, it is so quick. Thanks Melissa!

This rice was very, very good. I didn't have lime, so I used lemon rind and it was still tasty. We made the whole menu from the show and my family can't wait till we have this again. The cilantro really made the rice special. It didn't taste too coconutty at all - just delicious!

Delicious! I loved the coconut and lime together! A wonderful medley of flavor. My only problem is that the rice turned out a little bit more soggy than I would have preferred. I might have to readjust the amount of liquid added to the rice when I make it again.. not sure. But overall the rice was yummy.

The rice is wonderful but THERE IS A TYPO! 1-1/2 cups of rice needs 3 cups of liquid. Luckily I watched Melissa make it on tv and saw that she also added 2 cups of water. Very yummy!!
