Wonderful, I dressed it up a bit and added 2 Tbs. of Sweet Thai Chili Sauce and 2 Tbs. of Osyter Sauce. Topped it off with roasted peanuts for some crunch. The coconut rice is a must with this dish!

Very good! I make beef red curry fairly often and this is similar. I add a red or green pepper, some garlic (which this recipe didn't have & sometimes straw mushrooms and baby corn and also a little bit of freshly ground ginger. Like alot of recipes, it's one of those it's one you can add a little of this or that...

This recipe is VERY good but like a few others have said, something is missing. I can't quite nail it down and it's driving me nuts! It definitely needed heat, but that was a simple fix with crushed red pepper and a little Siracha. Maybe fish sauce and/or ginger? I'll keep an eye out to see if anyone figures it out. Either way it was delicious and a keeper for sure.

This is a great base recipe to do a super fast and yummy chicken curry. I browned the chicken breast on one side and pulled it ouf the pan before proceeding with the recipe, and then put it back in for the last 5 minutes of simmering ot finish cooking through. I also added fish sauce which added some needed salt and body.

This dish turned out great for me. My husband and I both loved it and it had the perfect amount of spice. Tasted fresh and healthy. I was surprised at how quickly it came together too. I used fresh cilantro instead of basil. As for the rice, I cooked it on the stovetop and it needed at least another 1/2 cup liquid.

This dish is amazing! Great flavor, with quite a kick! Love that the coconut flavor is not over shadowed by the diced tomatoes. I used 5 boneless skinless chicken thighs instead of chicken breasts so the meat would stay tender and moist. Will definitely make this again.

Really good. It's got great flavor, but isn't spicy. I separated it and made half spicy for the grownups with more paste and with some red pepper flakes.
Also, I used unsweetened almond milk instead of coconut milk. Much healthier and good for my coconut-hating family.
