    This is a wonderful salad to have for your family or for company. Instead of grating the pears, i just cubed them, it seemed to make it less mushy. But i still grated the beats. But a wonderful salad, will for sure make again.

    Wonderful flavors and I will make this again, perhaps using a flavored balsamic vinegar or roasted walnut oil. However, I have roasted beets a number of times, but always bundled in foil, so I was curious how these would turn out. I found that they took longer than an hour to cook, but also that they were hard to peel. The skin dried out, got sticky, and stuck to the beet. I lost a lost of the beets trying to peel them. I'll try this again but with my usual method of roasting beets.

    It was perfect. Simple. Delicious. Nutritious. Easy. I served it to my friends and they loved it. Of course, I gave Anne credit.

    So very delicious! I used baby spinach in place of the arugula and toasted slivered almonds in place of marcona almonds because that is what I happened to have on hand. I used it as a side dish a nice piece of cooked salmon. I will absolutely make this again.

    What a wonderful salad!! I am just now discovering beets and am still amazed by the different flavors that can come from them by how you prepare them. With this recipe I did alter it slightly. I used romaine lettuce as the base. I also used a "pear balsamic". This was such a wonderful salad and great for us diabetics!! Thanks Anne!!

    Very tasty...couldn't find fresh beets so I used the packaged ones in the produce section....may have been a little mushy. good flavors

    I made this salad and paired it with the Grilled Skirt with Herbed Breadcrumbs and Bagna Cauda Sauce..... Outcome: DELICIOUS!!! So sweet and yummy, not a fan of beets, but this recipe was so easy to make and so good....mmmm mmmm mmmm! Thx Anne Burrell, so much fun watching you cook:
