I have been doing my baked potatoes this way for years and was wondering when this may show up here. I played with this for awhile and here is what I came up with that is best. I rub the potatoes with oil or butter, coat with course sea salt and sprinkle with pepper. Do not pierce them (they will not explode. Bake in a toaster over or center rack in oven @ 350 degrees for 2 hours. Yes, 2 hours, 2 1/2 is even better. The inside is soft, flaky and moist while the crunchy skins are great to eat with a tad of butter spread on them.

Yes it's all about the crispy! If you really want crispy spuds, do the rub but cut the potatoes in 1/2 and cook cut side down on a cookie sheet. The cut side gets nice and crispy brown too! I find I need less fatty condiments this way.

These potatoes where delicious! I I crushed a clove of garlic with sea salt before I mixed it with the oil, then I baked 2 potatoes at 400 degrees F, they still took an hour to get cooked through. But it was absolutely worth the wait, the crust was the best!

I do the same except do not pierce with a fork as they loose moisture and start first for three minutes in the microwave and then put on oil, salt and pepper. I also do a warmer oven. 400 degrees. Fabulous!

That is good, but I have a much better way to increase the flavor! Use bacon grease and rub that all over the skins instead of the olive oil and use a great tasting season salt which has many different seasonings, instead of Kosher!

These are yummy and make the skins extra tasty. To get the same effect however, you can spray the potatoes with water and bake them as directed. Same results.
