Lots of flavor and easy and fast to cook. Can not always find the peppers called for in the recipe but easy to find substitutions. Husband loves this dish. I have cooked it twice and he raved over it both times. Served it with Rachael's recipe for Buttery Tomato Spaghetti. Makes a great hearty meal.

We cooked 4 pork chops so two are wrapped up for tomorrow night. The two for dinner tonight did not take on any of the juice. After we finished we wished we had not use this recipe. Hope the two soaking in the juice will taste better tomorrow. We had mashed red potatoes for the side.

very good. i think the sauce could be more concentrated, so I pulled the veggies and pork out then reduced the sauce to a much tighter consistency. much better. but, still a really good easily repeatable and healthy recipe. Also, be careful not to dry out the pork chops as getting chops 1.5 in thick is not common, so times may need to be adjusted.

Oh my lands !!!! This is awesome. I added a small had full of Sun Dried Tomatoes. My husband put the veggies/sauce on his baked potato and said it tasted like candy .I added red , green and yellow Bell Peppers.

This was pretty good. Nice addition of the fennel. I would have liked the pork chop to have taken on more of the sauce flavor. A simple caccitore sauce I may try again. The side of pasta with different sauce did not work for me.
