The tomatoes provided an added punch of flavor to this recipe. The eggplant wasn't soggy like I've experienced with other dishes in the past. This was definitely a home run. I highly recommend it!!! mmmm

My husband and I have never been fans of eggplant. We joined a CSA this year and so I found myself with two eggplants and in need of a recipe. I watched Jeff make this dish last Saturday and decided to give it a try. My husband was reluctant, but agreed to try it.
It is delicious! We both loved it. My husband said the pickled cherry peppers (which I had on hand, thanks to a co-worker who shared her cherry pepper bounty really made the dish. Carmelizing the tomatoes was insanely delicious on the sandwiches. Jeff is my favorite Food Network Chef, and I wish we could see more of him!

I made this a few weeks ago. This was delicious!!! I'm making again this week. Love Jeff's shows and recipes. He's made sandwiches all-stars!

I have made this sandwich again and again. WOW! It has got to be my most favorite yet. Love the freshness of all the vegetables. I did not use the burrata chees (couldn't find it I use Italian provolone instead, it was super. He's my favorite. Keep it coming.

this is the omg! of sandwiches. We've been waiting a long time for this recipe since my daughter and I saw it made on the next food network star competition and were so disappointed when you didn't make it on the first round of shows. But, so excited when you finally did make it. It is very time consuming but worth every second. We didn't use the peppers, didn't need them and couldn't find brioche rolls but found some great sturdy rolls from LaBrea bakery here in LA that grilled up great. This recipe would make an eggplant lover out of anybody who didn't know how great fried eggplant is on its own.

Couldn't find burrata cheese, but used Provolone instead. The pickled sweet cherry peppers are now a staple in my fridge. Perfect combo. I've had it 3 days in a row now. I even put your Giardiniera on top tonight, and it gave it a new depth of flavor. Thanks Jeff!

Made this for dinner last night. Used all ingredients but couldn't find the recommended buns and omitted the peppers. While a bit time consuming, this was the best meal my husband and I ever made! We devoured it and we're so happy we made extra for leftovers. This sandwich is even more delicious than it looks! My husband LOVED this and he's not even the biggest fan of eggplant! Go ahead and make it - you won't regret it.

I never made eggplant before but felt brave and bought one to try out one of Jeff's recipe. I didn't follow it exactly but the eggplant panko/pamesan frying technique was fun. I used roasted red peppers and spaghetti sauce since I didn't have whole tomatoes and used ricotta cheese. Came out delish. I hate the smell of eggplant but this recipe was awesome, thanks Jeff! My husband hates eggplant but he liked these and I loved them. I watch Jeff every week - I love his humor but best of all his recipes are fantastic. Keep up the good work - you are going places!
