    Really Delicious! My husband and I ate this for 3 days straight. We didn't have burrata cheese, so we used mozzerella instead. It was a bit time consuming, but the process on the whole was pretty easy. I LOVE LOVE LOVE the roasted tomatoes, I make them all the time now and put them on EVERYTHING.

    This was really the best eggplant dish I've had. We pretty much followed the recipe, except we couldn't find that specific cheese, so we used mozzarella. It is the way we'll make eggplant in the future--- whether it's in a sandwich or on pasta!

    Good recipe. I combined the East(Spice Goddess Eggplant recipe with West version, and good for diabetics, too. Dipped eggplant with chickpeaflour(garbanzo, yogurt, spices, and than in panko crumbs for crispiness. Cook theasuras in google, I found brioche buns substitute to crossiants, and chhalah jewish bread, so I could not find brioche buns so I used crossiants and laughing cow light quesco fresco & chipotle cheese. Turned out good, and tasty.

    Very good recipe. Loved the tomato sauce, i never thought of roasting canned tomatoes but will certainly do this again.

    This sandwich was tasty. I couldn't find burata cheese at my store so I used some mozzarella and provolone. The roasted tomatoes were yummy. It was a good lent meal.

    Delicious!!! A bit time consuming but well worth it. I found burata cheese at whole foods...I am now a huge fan of it!! The only confusing thing is what to do with the tomato marinade. Do you bake it with tomatoes? I put a small bit of it in pan but I think it needed more.

    I will definitely make this again. Thanks Jeff! Keep up the good work ...I love watching you!

    I happened to catch the last 5 minutes of Jeff's show today and this sandwich looked soo good! I was looking for something different to make for dinner tonight. I had to use the thick mozzarella cheese because I couldn't find burrata and I used ciabatta bread but it was de-licious!! Thanks Jeff for giving me something new and tasty that my whole family loved! The tomatoes were sweet and juicy, yummy!

    It took longer to prepare than indicated on the recipe - but it was well worth it. I was not sure about the ingredients with the roasted tomatoes but when you put it all together on the rolls - it is outstanding! Also - never had the burrata cheese - it is expensive but also well worth it! I used roasted red peppers in place of the pickled cherry peppers and it was delish! Make sure you use panko - it makes the eggplant very crisp and light. Served to friends and it was a big hit - will definitely make again!
