Really nice recipe. used spring mix instead of arugula and worked fine. Store was out of mascarpone cheese, so i switched cream cheese that I mixed with white truffle honey, which added a richness and flavor that was amazing.

This is amazing!! I made the dressing and the marscapone mixture the night before to save time in the morning. I didn't grill the pita, I just toasted in the microwave oven for a couple of minutes. It was very filling and fresh tasting.

Very simple and oh so good. Didn't change a thing about the recipe. This combination of flavors is really yummy together. My daughter folded the whole thing and ate it like a taco. I combined this recipe this with Giada's carrot and tomato soup for a wonderfully quick weeknight dinner.

This was a GREAT dish! Easy to make and SOOOOOO delicious! I made it this morning for Easter Brunch and hubby and I enjoyed it very much. The crispy pita on the bottom made a perfect "plate" for all the richness on top. I think I went a little heavy on the mascarpone so will ease up on that next time! This would be good with baby spinach too if you can't find arugula. To make the dish just a little more budget friendly, I bet you could replace the cheese with a whipped cream cheese and the prosciutto with a very thin, deli sliced ham. BUT you need to spurge and try it the way it was written the first time. O M GOODNESS! And it was!

I made this tonight and loved it! The way the flavors blend is awesome. I never would have thought to put egg, arugala, lemon juice and mascarpone together, but it really worked! I'll definitely be making this for my family again!
