Did not find the recipe overly sweet, it's name is "sweet tea" collins and we found it not as sweet as the sweet tea I have been served in restaurants. We would probably use a little less lemon so that more of a tea taste can come through.

DO NOT USE HONEY. What were they thinking? Is this a misprint? Equal amounts of water, mint and honey makes a base that is way beyond sweet. I used half as much honey - IT was WAY beyond sweet. Plus, even with half as much honey, the drink tastes very strongly of honey (in addition to being too sweet. That they then want you to add simple syrup is just nuts - and remember that bourbon itself is sweet. If I make this again I will leave out the honey altogether and add simple syrup to taste at the end. The tastes are nice - black tea, mint, bourbon.
