This made a hit with my family. I used a gluten-free rice flour mix and Splenda and it came out just fine. I made 2/3 of the blintz recipe in a 9"x9" pan. The only thing I would change is the amount of blueberry sauce. I made the full recipe of sauce and it still was a bit skimpy.

This beats making individual crepes any day! The blueberry sauce is fantastic. For those who see this makes a lot, I halved all ingredients, used ad 8" x 8" baking pan, and did not adjust any baking times. Came out great!

We had "breakfast for dinner" tonight. This was just FANTASTIC. It takes some time, but is not difficult. It truly tastes like cheese blintzes, and the blueberry sauce is scrumptious!

I made this this morming, it is absolutely delicious. Did not & would not change a thing. The blueberry sauce is fantastic, can't wait to try it on ice cream.

I watched the show in the morning and had to make it immediately! This was delicious it was a little bit tough to get the bottom of the blintze out of the pan, but the taste made up for it 100% the blueberry sauce was fantastic it is very citrus heavy which I loved, perhaps next time I'll cut back on the lemon and orange or add more blueberries. This was a totally yummy light and fluffy! Also I used part skim ricotta and it was still fantastic!
