Loved it! Perfect brunch salad. My guests really enjoyed this- the carmelized onions are the key. My mother cannot eat raw onions so this was perfect.

Scrumptious! I made this for Mother's Day and everyone--even those that don't like hard boiled eggs--thought this was the best spinach salad they ever had!

When I was growing up in Texas years ago, my mother used to make this salad frequently!! I had forgotten about it. Thanks, Ree for a blast from the past. It's a good one!!

Take the eggs off and don't use as much bacon fat. Many of her recipes come straight out of old cookbooks. As for this recipe, it is almost like a restaurant that used to be in Tulsa, Charlie Mitchell's. A form of that place has come back, and the difference in the salad is they shredded their eggs on top and I think they put shredded cheddar on top too. She got the idea for the cheese bread from there also.

I have been making this recipe for years out of my grandmothers cookbook. I prefer not all the fat and sugar that comes with it so I subbed Honey for the sugar... instead of cooking the onions and mushrooms in bacon grease I took bacon bits and put them in a cheesecloth then added HOT water alongside the bacon package with the onions, nuked them for a couple of min. (this put the bacon flavor in them also, sprayed cooking spray down then added a TBS of I cant believe its not butter and carmelized them... did that also with the mushrooms. Costs me a buck extra for the bacon bits but if it saves me a cardiac arrest... well worth it. Added a squirt of fresh lemon on it to top it off.

I found this same recipe about 15 years ago in Betty Crocker Cookbook. It is still one of my favorites and I do it occasionally.

Made half as much bacon and crumbled it over the top and substituted home made poppyseed dressing for the disgusting bacon fat. This has got to be one of the unhealthiest salad recipes I've ever seen.
