I used to cringe at the thought of meatloaf, but my husband kept asking for it and I decided to try this recipe - and it's a WINNER! So flavorful, tender, and the sauce really takes it over the top! I add a little garlic and onion powder (maybe 1/4 tsp each to give it more flavor. My husband says it's even better than his mom's meatloaf - WIN!!!
A couple tips -- throw it all in a KitchenAid mixer and use the dough hook to mix it up - fast, easy, and no ground beef stuck in your fingernails (yuck!. Then you can dump it right out onto your broiler pan and easily shape it. Also, for me, it took WAY longer to cook than the recipe states - closer to 2 hours at 350*, but it was still tender and moist. I cooked mine for 45 min UNsauced, to crisp up the bacon a bit, then added sauce, cooked it for 30 min more, added more sauce, then let it cook until the internal temp was around 170*. Delicious!!! Very tasteless first time I made it the next time I added onions and montreal steak grill seasoning much better, and less milk. With those changes it is our new meatloaf recipe.

My husband loves meatloaf; not me. I can count on 1 hand how many times I've made it in 23+ years. That being said I saw the episode with this and thought, hmmm, just maybe... Last weeked I made the spicy pop pulled pork - very delish even though I had to sub chipotle salsa for chipotles in adobo sauce due to my store - and I only had cherry dr pepper. Hubby was so impressed with that I mentioned the meatloaf and needless to say I made it the next day. OMG!!! It was the best! The bacon, the sauce, the meatloaf itself - all awesome! AND it was better the next day (and I dislike leftovers!!. I used ww bread instead of white and had to use a squirt of yellow mustard cause I was out of dry. Teenagers loved it to. Definately making again and again and again! Thanks Ree. You rock!

Easy to make, using the broiler pan makes clean up so easy (line with aluminum foiland the meat is very moist. I actually doubled the sauce recipe, it's excellent. The whole family loved it, and during clean up, we were already anticipating tomorrow's lunch!

I made this once before and I'm making this again! I thought meatloaf was pretty boring until this recipe. My boyfriend and I both love it and I can't imagine making it any other way now. Ree is my new favorite chef now. Yum yum!
