I had never worked with fennel, let alone had it, until this recipe and I was very surprised with how well this dish came out. I couldn't find snapper so I substituted tilapia, and I'd definitely make this again when I come across some snapper. I also cooked some white rice and placed the fish and veggies on top to absorb some of the loose juice and it complimented it very well.

I made this dish for guests with a few alterations. I used 5 large pieces of swai and 6 plum tomatoes cut into quarters for the sauce. Made this in a skillet then spread some in the bottom of a baking dish, placed fish on top and then used remaining sauce to cover the fish. I baked this in the oven. All loved it.

WOW! It was AMAZING!!!!!!!!!!!!! So easy and I can't believe how wonderful the taste turned out. HIGHLY recommend! And, only one pot and a cutting board!

I was looking forward to this because I've been wanting to use fennel to see what it's about and because it seemed pretty healthy. But this was oddly bland and my husband agreed it was bland...and I followed the recipe to the letter except I used talapia instead of snapper. I made something a bit better with the leftovers though.... a soup! I just pulsed it a few times in the blender and threw it in the pot with a little cream and a pat of butter. Pretty good soup but even so I won't make this again.

Loved it! I used Salmon for the recipe, added some green bell pepper, used Marsala wine (instead of white wine and used a Fish Herb blend. Super yummy! The Husband LOVED it!

Great--BUT--Once again--do not *ever* use chicken stock in a fish dish! Too salty and ruins it--use safe veggie stock instead. I had some veggie friends/pescetarians get sick from the nasty chicken broth--Play it *healthy* and *safe* and use Veggie stock every time....!!!!! ♥•.¸♪♫ ♪

Excellent recipe! I love the fact that this is just one pan, and so easy. I made this with Rockfish, and it was great. Easy, quick and perfect for a busy weeknight meal.
