I dont know whyyy everyone us raving about this recipe. I thought it was OK. Needed some flavor from herbs or spices. Definitly not making it again.

This was sooooo good! And it was super easy to make low fat/calorie! I used organic low fat, low calorie wheat tortillas, low fat jack cheese, fat free Greek yogurt, cumin, oregano and used a chipotle pepper (bc I didn't have poblano on hand. I think next time I'll add 1/2c black beans.

This recipe is awesome! I made it for my vegetarian sister and she LOVED it! Great Meatless Monday dish. Made it exactly as the recipe states and it was delicious. I wouldn't change a thing! Making it again this weekend.

who knew zucchini & corn were such a great combo. Husband & daughter both loved this. Reminiscent of the layers of lasagna-very forgiving & flexible with changing out ingredients although I made the recipe exactly as given & thought it was wonderful.

Amaziiiiiiing! My whole family LOVED it! Followed the recipe exactly, but used 6 tortillas because 4 leaves about a third of the pan exposed.

OMG this dish is awesome! It's a combination of an enchilada casserole and chilaquiles in one dish!

The tomato mixture is delicious, the veggies, the cream and the cheese! I could become a vegetarian now! it's that good!

I used more poblanos and less zucchini. I like zucchini but 3 of them were too much for my liking. I don't remember how many tortillas I used, my brother kept eating them fried so I lost count. I probably used about 10. This recipe is yummy!
