I have made these for breakfast, too! We change-up the seasonings depending on what we are eating them with. Sometimes spicy with smoked paprika, sometimes savory with rosemary.

I also have been making these, for awhile now. I season them with: paprika, garlic powder, sea salt, fresh ground black pepper and sometimes, onion powder. Leaving the skin on is also an added nutritional bonus.
You get the nice crispiness without all the calories, fat and sodium of regular french fries.

I love this dish! I use Seasoned Salt instead of Kosher though. It adds just a bit of extra oomph. Everyone in my house loves it. There are never any leftovers.

I do them like this all the time for a quick side dish for supper. Don't even bother to slice them I keep them whole if potato is small or half the potatoes. I often add in wedges of onion sliced through the root to keep them together and sliced zucchini and squash. I let them get crisp and brown all together, and voila potatoes and veggies done all in one dish for supper no fuss, no muss all easy. I often toss on herbs fresh or dried whatever I have on hand. My family loves them like this.

I do something very similiar with just quartering small red potatoes and adding some garlic to the olive oil....oh so good.....Great when your meal does not 'provide' gravey
