Will make this salad again. I had a difficult time finding israeli couscous, but found it after my third stop at Whole Foods. I used regular balsamic instead of white balsamic and I realized I did not buy the flat parsley, but I used the curly parsley. I thought this salad was unique and delicious. Thanks Giada!

I love this salad! The smoked paprika vinaigrette is so different and super tasty! I usually add some shrimp to it for some protein. Thanks for another great healthy recipe, Giada!

I made this for a birthday pot-luck on the beach, everyone raved about it. I used basil (chiffonade instead of spinach because its what I had on hand, and added zest and juice from 1/2 lemon This recipe is so easy and versatile, you can easily adjust to your tastes. Thanks for yet another keeper, Giada!

Also must add some cucumbers, cut in chunk's, makes it and we eat ours on lettuce leaves, delish.

I really love this salad - it's a beautiful addition to the plate, and the combination of flavors is wonderful! The hot couscous wilts the spinach just enough. I add a little more spinach than called for just because I love it, but not too much or the couscous gets lost (learned that the hard way. The slivered (not smoked almonds add a great crunch as well as flavor!

Fabulous! I think the smoked almonds added a bit too much to the smoked paprika, but it was still fabulous! My husband doesn't like mint or feta so I made it more "italian" with fresh mozzarella and basil. Fabulous! The white balsamic is a must! The recipe makes alot so save some dressing to add later when you will LOVE IT AGAIN the next day!

This is a colorful, summery side dish; a perfect accompaniment to steaks grilled on the BBQ. I swapped feta for mozzarella chunks & omitted the mint.
