The pimiento cheese is awesome. I was eating it with a spoon before the burgers were even made. Not only that, but it was super easy. I didn't have white cheddar, so I just used 24 oz of yellow cheddar. Also, I used medium cheddar cheese instead of extra sharp because that's what I had on hand. It turned out great, although I bet the extra sharp cheese would have made it have more of a kick melted onto the burger. The other reviewer is right, it makes a ton of cheese, but seriously ... that is never a problem for me! Planning on a pimiento grilled cheese sandwich today for lunch!

It was delicious! The pimiento cheese recipe was amazing, and that's high praise from a southern girl. Just note that it makes waaaaay more than you will need for 4 burgers. I cut the recipe in half and I still have some leftover, but it's great on crackers or a sandwich so who cares?
