I am known as the substitute queen, I am all for using one ingredient for another, but there are some boundaries one should not cross especially for any Italian or Italian-American. Just ask one...the response will be unanimous...'cottage cheese for lasagna? Yuck!" I don't understand why anyone would use cottage cheese in a lasagna, even a lighter version, when there is a suitable substitute for whole-milk ricotta; it's called SKIM or LOW-FAT ricotta. That being said, I made this totally vegetarian b/c I had a guest who couldn't eat meat. I used more portobellos bc they are 'meaty.' I used ricotta cheese as well! If I couldn't find ricotta cheese to make this, I wouldn't--period! Try the low-fat ricotta, you'll be glad you did. There's a world of difference.

I followed this recipe exactly as written. I even found special oven ready big lasagna sheets like Bobby used on the show. The flavor was very interesting and different from the traditional lasagna. I was surprised that I didn't really miss the pork sausage and the ricotta cheese. I usually make lasagna because my husband loves it but this time I became a fan myself. Thanks for great recipe!

I love the flavor and texture of this recipe. The lower fat and higher flavor and health content is AWESOME! Even better with homemade pasta sheets. It got even my not-so-fond-of cooked mushrooms on the band wagon.

This recipe is awesome. I had to use canned mushrooms (not my first choice and the boiled pasta and needed a little more mozzarella to put on top but this was great. I used shredded Parmesan too because the alternative was too expensive. My husband and I loved it.

I watched this show a few times and decided to try the recipe myself. It was fabulous! It really helped having the visual to see what to do. Very tasty! The fennel really did make the lasagna seem as if there was sausage. Thank you Bobby Deen!

I agree I came here to get the recipe for the pasta , only to find the recipe was sending me to the store to buy noodles. It is a shame because several times through the show he has said that one of the things make it healthier is the home made pasta......
