Just made these for work to rave reviews. Couple of things... I never did get my flour/butter mixture to form a ball. It had more of a meal-like consistency... but it didn't seem to matter. I doubled the recipe as 12 was not going to cut it and I found that I needed to increase the cornstarch in the mango filling. 1 T and 1 t. might be fine for a single batch, but when doubled I had to take it to 3 T. total to get a nice thick pudding-like consistency. Otherwise it was a little loose for the filling. Also, I saw no reason to strain the filling. Maybe it's because I used nectar vs. "thick juice". Not sure, but it was fine. Frosting was delicious. Amazing how much flavor you get just from the rind of the orange. If you're a tropical fruit sort of person, this cupcake will be tops on your list of must haves. It's a divine little slice of tropical heaven!

These cupcakes were AMAZING!! The orange buttercream was the best I have ever had! Everyone loved them, I did change the filling to a pineapple, but the mango was very good too. It's a great recipe and I think everyone should try it even if you don't like coconut.
