I made this recipe this morning and it turned out great. I had just watched the show so i knew to use hot water, I also used mild roasted Hatch chili peppers since they are in season and topped the casserole with thinly sliced red tomatoes, it came out great!! Fluffy and delicious.

I made this recipe this morning! Yes, as others have noted, Ree used boiling hot water in the water bath whereas the recipe calls for simply water. This is an issue with the recipe as posted online and not as Ree had made hers in the video. Mine set up, but it was watery in the bottom after resting for 10 minutes. Next time I'll return to my old recipe that calls for 1 3/4 cups whole milk (instead of 2 cups and 1/4 cup flour (in the egg/milk mixture, which helps make it fluffier. To make the casserole brown better, try sprinkling 1/3 cup grated Parmesan on top just before placing in the oven. As written, this recipe works fine... just make sure to use hot water in the water bath. Even if you don't water bath it at all, this recipe is always fun and yummy.

We poured the half-inch of hot water into the larger baking dish, not into the actual casserole. This is the customary way of baking custard-type dishes in the oven, and helps to cook it more evenly while keeping the top of the dish moist. Came out perfectly, nice, easy, tasty recipe.

After reading the reviews I decided to put about 1/4 cup of flour in with it and it came out good and not running as others said. hope this helps!

Very good, but I had the same problem, did not set. I think it may be that the recipe does not say hot water, before putting in oven. I watched show again and she said hot water. I will make again and see if that was the problem. I also made it in an 8 X 8 pan. I used 4 cans of chiles, same amount of cheese and only 3 eggs, and alittle over 1 cup of milk. I also adjusted the spices. This is a keeper! Thanks Ree! It is only husband and I. I have enough leftover for tomorrow for breakfast!

Good, but must be error in cooking instructions?
I'm an Arizona girl living in the deep South and love chile rellenos, so I wanted to try this right away. It was oh-so-easy and tasty, we ate as breakfast "tacos" with salsa on top... (kids wouldn't get near it with a 10 foot pole! But after 45 minutes at 325 per instructions, it was still just soupy eggs. I cranked the oven to 425, gave it 20 more minutes and that did the trick. It didn't "puff up" like I'd hope, it was very wet and almost like scrambled eggs, but flavors were good. Would make a lovely brunch dish.
