    I've been trying to find a Spanish rice dish for years....this is it! (unless you're cooking for 12 or more, HALF the recipe...it's a lot!

    This was the first time I made this casserole. What a crowd pleaser!! It goes very well with any kind of protein especially cooked on the grill. Thank you again Ree.

    I have made this rice casserole many times and my family now asks to make sure we have this whenever it is Mexican night at our house. I have found that cutting the recipe by half will still make enough to feed my family of four and my three guys have hefty appetites. I have modified the recipe to our palette and heat level. I use the "hot" Rotel, instead of whole tomatoes I use crushed tomatoes and I add approximately 1/4 teaspoon of crushed red pepper flakes. I also like to drizzle a little salsa verde over my serving. My family likes monterey jack cheese and I have used that and it is cheesy deliciousness. I plan on trying shredded pepper jack the next time I make this kid and hubby approved pleaser. Thanks Ree for making this working mom look I mean cook like a rock star.

    Very easy recipe to make. I omitted the cheese and the rice was good on its on. It makes a huge amount of rice - I will make half the amount next time. I made ahead and rewarmed before serving. Topping with fresh cilantro just before serving really brightens the flavor.

    I made it for dinner last night it was good. I used my canned tomatoes and I thought it had a great flavor. Next time I will cut it in half. It is a keeper. Thanks again for another great recipe.
