I have never written a less than 5 star review of a Melissa dish. This recipe needs some changes though. The flavor of the marinade is perfect. Lemon, spicy, oregano. However there is no way the veggies will cook in 40 minutes. More inmportantly they steam under the chicken. I removed the chicken from the dish after it was cooked, and put the veggies under the broiler until browned. I substituted fennel for the onions. Will make again, but I will put all on a sheet tray for more browning vs steaming in a casserole dish.

I used twice the marinate and the chicken was very good. I cut the potatoes and carrots in small pieces but they did not get soft after cooking for 45minutes at 400 degrees. I live at 6,000 ft. so that may have had something to do with it. I will make this again but I will put the potatoes and carrots in the microwave for a few minutes before putting everything in the oven.

This is a keeper, so easy. Great for workweek, just marinate before leaving for the day .

This chicken was easy and delisious. Left overs taste even better the next day. Thank you Melissa for creatng great recipes that are easy on my budget too!
