Fantastic recipe!! This soup is a winner. I have made it repeatedly, and we are all crazy about it. So simple, so good. I do not add the cream, it doesn't appreciably change the soup. I do not add the croutons, although they appear delicious, this soup stands alone very well. The orzo adds some additional texture, and I serve it with a salad and bread for a fast, healthy meal. This is also a wonderful first course soup.

Easy & delicious. I used 1 very large sweet onion and a shallot and added an extra 14oz of tomatoes. Added fresh thyme & basil and omitted the saffron. Made the grilled cheese with smoked gouda & swiss cheese in honor of national grilled cheese day!

This soup is SO GOOD!!! I have never really liked tomato soup but saw this recipe, read the comments and thought it was worth a shot. I just made it for the 2nd time, my husband and I LOVE this recipe, definitely going to be a staple in our house.
I did not include the orzo, or the saffron as I saw others didn't either, it's expensive. I added 1 tbsp sugar, and about 1-2 tsp of my traders joes chili pepper sauce just for a small kick, AMAZING!!!!! We made grilled cheese sandwiches which were great but dunking them in the soup was pretty spectacular.

This recipe is simply fantastic! It's dead simple and so flavorful, even without the croutons (I cheated and just made grilled cheese sandwiches with gruyere.
I thought the saffron added a lovely flavor, and I used fire-roasted Muir Glen crushed organic tomatoes. Wonderful. We had it for dinner and I'm packing it in my lunch all week.

We really enjoyed this soup. I used good quality extra virgin olive oil and Cento crushed tomatoes. I sauteed the 3 cups of onions until they were golden brown, takes longer than 15 min. though. Followed the recipe except for the addition of about 1 T sugar and a small amount of basil. The amount of onions were perfect for us. I also didn't make grilled cheese as croutons but made them to go along side the soup using Apple Smoked Gouda. I added a little extra Orzo. Everything was delicious and we'll definitely make this again, including the grilled cheese with the Gouda.

This was really really good and satisfying! The orzo was a brilliant addition to the recipe and the grilled cheese croutons pulled it all together. I also did not add saffron

Loved it, did not have saffron but it was still great. I added some sugar to cut the acidity and I think it would be great with a little less onion and more orzo! (I'm just a noodle junkie Wonderful, filling, warm feel good soup!

This is such a great, easy and delicious soup. I only used 1 onion seeing that was almost too much, next time I will use less. (Too much onion overpowers the tomato flavor! I made the cheese croutons and used havarati cheese instead of the gruyere. It turned out EXCELLENT!
I will be making this from now on when I want a great Easy Tomato soup.
