There were four of us for dinner and everyone loved the soup. I have never liked canned tomato soup but this was noting like it. I used regular crushed tomatoes because I couldn't find San Marzano. Only used 1 teaspoon of salt thought 1 tablespoon would be too much. I got the saffron at our public market and it was half the price of the grocery store. Made old fashioned grilled cheese (the way mom always did and dipped it in soup. Might try basil next time like others posted. Will make it again.

I used basil in place of the saffron and it was delicious.

I was disappointed with this recipe. Typically I love creamy tomato soup on a cool Fall night but this just wasn't it. Some of the other reviewers commented that they were light handed with the saffron threads, so I added a bit more and maybe that is what went wrong. The soup was overpowered by the saffron. As suggested by another reviewer, I used an immersion blender which I would highly recommend to add that smooth, creamy texture. Maybe next time I will swap out the saffron for basil, which is way more economical.

Wow, this was amazing!! I've never liked tomato soup (thoughts of red colored water come to mind and this was one of the best soups I've ever had. Ina I'm now officially a fan of tomato soup. A few 'changes' I made: to lighten the recipe I substituted half&half for the heavy cream, I didn't use saffron because it was way too expensive for the little amount needed and for the grilled cheese croutons I made them on the stove top (don't have a griddle maker and I used slices of peper jack cheese with bacon crumbles (good think I lightened it with that half & half haha. This was amazing!!!!!

This was everything I love about grilled cheese sandwiches and tomato soup...grown up and much more sophisticated. I didn't find gruyere at my local supermarket so I used baby Swiss instead, and used rustic Italian bread for the sandwiches. I, like another reviewer, didn't taste the saffron, but it was likely because I erred on the side of caution and used just a pinch so it didn't overpower. We ate it for three days. It was simple, fairly quick and absolutely delicious.

I made this the other night and it was exactly what I was looking for! I used sweet Walla Walla onions instead of yellow and let them caramelize, then added a little extra garlic and after adding the stock and tomatoes I let it cook down longer to intensify the flavor. I then used an immersion blender to get a smooth yet thick consistancy before adding the orzo. I also added crushed red pepper flakes and lots of fresh basil along with a pinch of sugar to cut the acidity. Absolutely yummy and a definite keeper! Also do not skip out on the Grilled Cheese Croutons! Gruyere is one of my fave cheeses but instead of plain white bread I did use thick slices from an Italian loaf. I prefer the dense crunchiness you achieve from it.

Very satisfying soup. My boyfriend who isn't a big fan of tomatoes loved it. I love the texture with the orzo. I couldn't really taste the saffron so next time i'll add more. Overall it was great.

Just made this soup and my wife and I loved it. I see that the chunkiness of the onions and orzo puts some people off. Not us. I thought it made it hearty and added great flavor. My only alteration is that I'd probably use 1/2 tablespoon of salt instead of the full one. Besides that I wouldn't change a thing.
