    If you haven't made carrot cake in a while, this is the one to make. The cake isn't tremendous and the cream cheese frosting is perfect for it. I did cut the frosting recipe in half and it worked just fine for my family. I may use a little less sugar than the recipe calls for the next time, I will make it again.

    I love this Carrot Cake recipe!! My whole family ate it in one night and was begging for more. In Hawaii we love our food and desserts, so it was a big hit!! The only issue I have with this recipe is that I had some trouble removing the cake from the bundt pan, but I'm not sure if it's my pan or not using enough pam on it? Either way this is a recipe I'm going to make again and again!

    Great base recipe but needs something. Though it's not as heavy and oily as most carrot cakes I'd still reduce oil by 1/3 cup. Also, might add raisons and nuts into the batter and maybe some other spices - nutmeg perhaps and/or ginger. The cooking time was too long for my oven - no one else mentioned it so maybe it's just my oven's calibration. 40 minutes would probably have been better than the 45ish minutes I baked it for.

    The frosting is perfection - definitely makes the cake. All in all a very easy recipe and good flavor.

    This recipe was sooooo easy and I had all the ingredients already except for pecans so I used walnuts instead. Very moist and delicious!!!! Next time though I think I will put in a half or full cup of sour cream to make it even moister.

    Made the cake exactly as written. This is some good eating. My daughter said it was the best carrot cake she had ever eaten. Easy to make and the icing was perfect.

    I am going to a house warming party tomorrow and will make this cake for it. Keep up the good work Ree.

    This carrot cake is delicious... when I saw the episode I said I had to try it out...had a Three Kings Day party coming up the next day so I made it... it was a hit!! Everyone loved it. It was super easy to make and it came out really moist and with a beautiful color... the frosting was the perfect combination.
