I made these for Cinco De Mayo. Excellent. They are the Best Enchiladas I have ever tasted. I substituted the beef for ground turkey. My husband loved them. Said they were "Killer". Thank you.

When I look for recipes I am not looking for something that uses prepared cans so this was disappointing. I make a mean enchilada sauce of my own out of a blend of cumin and red chili powder, red chili flakes, a pinch of salt and chicken broth. I only want to use organic items that would be found in the country of origin.
The rest of the recipe is fine. I'd add sour cream or natural yogurt, some Mexican rice and a simple salad.

Made them with chicken instead-I seasoned and roasted the chicken, sauteed the onion, added the chopped chicken to the onion and sauteed the mixture until slightly browned. Finished the recipe as written. FANTASTIC!!!!! If you don't find these enchiladas flavorful enough, you are not using the right ingredients (quality canned products, good cheese, fresh quality meat and veggies.

This was only an OKAY recipe for me. I am a meat fan and I would have liked more meat. I was not a big fan of the sauce, but maybe I chose the wrong enchilada sauce. If anybody know of a great enchilada sauce please share. It was easy to assemble and it was good, but if I find another sauce to try , I will use more meat and cheese next time.

It was simple to make, i am not sure the directions said to fry the tortillas first but the video did. Also leftovers make a super good dip for nachos if you just cut them up and microwave. I would definitely make this again.

Simple is right. So basic my kids loved them. I don't like to fry my tortillas so I steamed them in the microwave and then dipped them in the enchilada sauce. Healthier and less of a mess. I felt the meat needed a little more taste so added garlic and cumin. I made them with only meat and cheese for my kids and topped mine with avocado, sour cream, and green onions. Yummy!

While this recipe takes some time to prepare it is well worth it. I have been dying for some enchiladas and after making these I was impressed. They tasted great and my husband loved them. This would be a good dish to make for company too!
