    I stacked mine as the corn tortillas were the Costco ones...too small to put much, if any filling into and roll successfully. I found frying the tortillas first to be a greasy mess...fry until soft but loaded with oil...put onto a platter one on top of another...a gloppy mess of oil. Then dip in the sauce and stack - that part was good. Tortillas ripped...think the Costco brand not good for this recipe.
    Taste was good but too much sauce. However, the flavor of the enchilada sauce was very good. Will use that again. Not sure I would bother with this recipe in the future.

    My first time making enchiladas, and Ree is right - they were simple, and they were delicious. Hubby has requested this recipe to be served again and again, and he also suggested we serve it at our next dinner party!

    I followed the recipe as is, made no modifications.

    I LOVED THIS RECIPE !!!! : I have been looking for a good red enchilada recipe and this is deff the one ... I made it for my boyfriend who isn't the biggest fan of Mexican but and he couldn't stop eating them ..I added some cayenne and fresh jalapenos and served it along with my homemade gauc .. he bragged to all our friends and now they want to be invited over the next I make them .. : I cant wait to try out more of ree Drummond's recipes!!!!

    WOWZERS! Amazzzzzing! These were definitely time consuming but well worth the work. I used whole wheat flour tortillas since I despise corn tortillas. I added sauteed mushrooms inside the enchiladas with the olives and green chilies and cheese mixture. I'm not sure if frying the tortillas first helped at all because they were still gooey and soggy after they baked [not complaining they were still delicious]. This recipe is a keeper, might even try it with shredded chicken next time!!! Another winner, REE !!

    These enchiladas were the real deal. They were better than my favorite Tex/Mex restaurant. The family loved them.

    This is the real deal. I have used this recipe for years and it is the BEST. Adding chopped onions, cheese and olives to the top just make it that much better, and a really nice dish to serve. Note that many recipes do not call for frying the tortillas before filling them but it is essential to achieve the right texture and keep the tortillas from being gummy when baked.

    These were very good enchiladas. However, there are a lot of steps and my kitchen was a mess. I have a small kitchen too so I ran out of room. I think if you have a large kitchen and a lot of room to work, these might be easier to make. They were still very good enchiladas, I just think I may look for a simpler version in the future.
