I have been looking for an easy and delicious rice dish to accompany Mexican food. This is it! I added a can of rinsed black beans toward the end of the cook time. I ate the left overs for lunch the next day. Yummy!

I used my rice cooker , I used the chicken broth instead of water and Jasmine rice with some roasted garlic along with the cilantro and lime juice, it was so good I was asked to make a second batch..lol

I cut the recipe in half as well. I used the juice and zest of one whole lime. I liked the flavor but could be overpowering to some so it wouldn't hurt to cut back on the juice a bit. I also had to use about two cans of chicken broth to get the rice cooked. I thought it was deliscious!

I really liked this dish. I cut the recipe in half and actually only used half a lime and it was perfect for my taste. A hint of lime but not overpowering. Definitely needed the cilantro for flavor. Good for serving with Mexican dishes!

Loved it! There is only two of us so I cut it in half and just used one lime after reading the comments. For us it was perfect.

This was so easy to make and so delicious. I made it as a side dish for chicken fajitas and black beans for a tex/mex style dinner and the fam loved it. My husband loves white rice but to me it's always a bit plain. This was just the perfect recipe to spice it up a bit. I definitely recommend this.

My husband and I both liked this rice. I'm not sure how lime infused everyone else's was, but ours was SERIOUSLY lime flavored. Maybe, since the limes I used were really large, it caused the flavor to be quite overwhelming. I didn't even add the lime juice from the last lime. I'm also not sure what I didn't wrong, but my rice seemed kind of crispy and undone at the end. We still thought it tasted ok--maybe I needed to cook it longer? I did simmer it for 15+ minutes and the rice wasn't all dried out--there still was enough liquid in it to keep it moist. I would try this recipe again. Hopefully next time the rice will be done better...by me. We made this along with Ree's (The Pioneer Woman enchiladas. It was a nice change from typical Mexican/Spanish rice that tends to accompany Mexican dishes.

OMG! This is the best rice ever. My family really enjoyed and was trying to figure out what was in it. They never could figure it out but made their requests known that they want this rice every night. I just laughed out loud. I wish I could give this recipe 10 stars.
