    This is good, and my whole family likes it. BUT, at least at high altitude, this needs A LOT more time than 15 or 20 minutes. I kept adding a little extra water and turning up the heat to soften the rice. Next time I will add more liquid from the beginning and extend the cooking time by twice. Also, I use "Better than Broth" and I really made strong broth. You have to make sure it doesn't get to salty, but that extra chicken flavor was intense and delicious.

    I served this yummy rice with grilled bacon wrapped filets and a cucumber, onion, and tomato salad, The flavors all complimented each other. The light sides were perfect for a hot Texas day!

    I have been looking for an easy and delicious rice dish to accompany Mexican food. This is it! I added a can of rinsed black beans toward the end of the cook time. I ate the left overs for lunch the next day. Yummy!

    I used my rice cooker , I used the chicken broth instead of water and Jasmine rice with some roasted garlic along with the cilantro and lime juice, it was so good I was asked to make a second batch..lol

    I cut the recipe in half as well. I used the juice and zest of one whole lime. I liked the flavor but could be overpowering to some so it wouldn't hurt to cut back on the juice a bit. I also had to use about two cans of chicken broth to get the rice cooked. I thought it was deliscious!

    I really liked this dish. I cut the recipe in half and actually only used half a lime and it was perfect for my taste. A hint of lime but not overpowering. Definitely needed the cilantro for flavor. Good for serving with Mexican dishes!

    This was so easy to make and so delicious. I made it as a side dish for chicken fajitas and black beans for a tex/mex style dinner and the fam loved it. My husband loves white rice but to me it's always a bit plain. This was just the perfect recipe to spice it up a bit. I definitely recommend this.
