    I'm surprised by some of the bad reviews. This was super easy to put together and throw into the crockpot. I cooked it all day on low and it came out perfect. The flavors were amazing. My whole family really enjoyed this stew

    The taste is great- kind of spicy! I thought it should've called for more water/broth/juice of some sort, because it didn't really make a "stew" like I pictured.

    This is a great recipe and super easy to customize. Here's some thing that I did when I made it.

    Replace fresh thyme and ginger with dried
    - I will sometimes have fresh time, but I always have dried thyme. Fresh may enhance the recipe, but dried won’t kill it.

    Petite diced tomatoes instead of Mexican-style tomatoes
    - I like the flavor that tomatoes can add, but I don’t like chunks of tomatoes in my food. This is the best way around it. Also, I don’t like spicy food, so tomatoes with peppers sounds nasty to me.

    Don’t peel the potatoes
    - There really isn’t a need to peel the potatoes if you scrub them pretty good first. Plus it’s a hell of a lot easier to make if you don’t peel the potatoes.

    Cut things smaller
    - For things like soups/stews, it’s good to have everything be spoon sized. If it can’t easily fit within your spoon, it’s too large.

    Add extra liquid
    - I like my stew with a bit more liquid, so I add about an extra 1/2c of water or beef broth.

    I have made this several times. It is really tasty and super easy. Meat is really tender and spice mix just right.

    We really enjoyed this. I followed the recipe to the letter and used fresh herbs from our garden. We noticed that it tasted even better when we ate the leftovers the next day.

    This wasn't so great. It seems there should have been mango or something fruity along with the spicy... and even the spicy wasn't enough.. I like the idea of a Caribbean beef stew but it needs more zing

    I was really disappointed with this recipe. The Rotel made it uncomfortably spicy, even for me. It definitely needed "something" else added to it. I had to add a lot of sour cream, a lot more salt, more allspice, Kitchen Bouquet and beef concentrate to make it taste even remotely edible. I will not be making this again.

    This stew was good, but it was short on sauce. I ended up adding some beef broth to make it more "stewy".
