I have never posted a review for a recipe, but I was really surprised how good this was. I was looking for a meat-free recipe and this one hit the mark. I substituted chipotle powder and cayenne for the chili powder, which gave it great depth and kick. Will definitely make it again.

We love spicy so did 4 chipotle peppers instead of one and decided to forgo the cream sauce. Was delicious! Will make again and again.

I used my own recipe for the stuffed peppers with quinoa (including a chopped grilled veal loin and some homemade tomato sauce, but I was searching for a recipe that would include an avocado as I had a nicely ripened one that I was looking to use up. The addition of the avocado cream sauce on top was worth the 5 stars alone! I did not have low-fat greek yogurt, but I substituted for fat free sour cream and it was positively delightful.

I would be only giving this a 3* had I not made a mistake in the prep. I failed to cook the tomatoes down for 15 min. so I ended up with a runny mess. Other than that, I thought the flavors were good and I am always pleased to be eating healtier food. But my husband & son wouldn't touch it and they're usually open to new recipes. This one just didn't appeal to them though.

I was distracted and rushed while making these and messed up on some of the directions and only had crushed tomatoes and these still came out fantastic! The avocado cream was so easy and delicious. I paired this with an adobo rubbed pork loin and couldn't stop dipping it in the avocado cream! I will say though I had a lot of stuffing left over after stuffing two large poblanos, next time I will buy at least one more large pepper.

Amazing! Just tried this recipe using Quinoa today a long with a breakfast recipe my dietitian gave me. Both were fantastic! I have never cooked with or eaten Quinoa before today nor has my family. I received so much praise tonight from my family on this meal. Thank you! I think the only things I did differently was cook the quinoa in chicken stock, used jarred minced garlic which I added more to taste and I used a Mexican Cheese blend I had on hand. I had one picky eater and she loved it!

Absolutely delicious! We had never eaten Quinoa before, but my family agrees that this is going to be served frequently from now on. I followed the recipe exactly as written and won't change a thing.

Sooooo delicious!!! Made this exactly as written. Even my carnivore husband liked it. Paired it with Gianda's Spinach and Turkey enchiladas. Excellent meal. A definite keeper!

OMG! This is so good. As soon as my husband and I watched the show wanted to try it, we love quinoa!!!!! Excellent idea, awesome and healthy combination ( beans & quinoa. My guys 5 and 7 years old liked it and ate everything!!!!
