    I made the hollandaise (which was my first attempt ever as I've always been intimidated for eggs benedict and it was excellent! It took seconds to make (after assembling ingredients and I cannot wait to make again with asparagus and many more things! Thank you, Ina!

    As soon as I saw this episode I knew I had to try it! We love roasted asparagus and I'm always looking for new ways to compliment it. The combination of the crispy proscuitto, Hollandaise and the fried egg was rather like a deconstructed eggs Benedict. The only problem I had was my Hollandaise broke. I've make the recipe before with perfect results, so the only thing I can think of is that my eggs weren't quite close enough to room temp. I had to resort to the packaged Hollandaise mix - which isn't half bad...in a pinch. My husband thinks I'm a rock star in the kitchen. How bad can that be :

    Amazing! Very easy to make and elegant on the plate. The balance of flavors are perfect for a brunch. I substituted a flat bread for the english muffin and it worked well. My husband said a rosemary herb bread toasted would also be a good base for the ingredients. Highly recommend this recipe. Thanks Ina for a fresh new twist for an old breakfast staple.
