Made this today because my Husband was craving Mushrom soup and was willing to go out and buy the ingredients. I am happy to report that he said that it was well worth the trip.
He forgot the carrot and I didn't have any at the house, so I don't know if it would have been better with it or not.
Like kristaaconte, I also wanted a smother soup and I put about half of it into a blender, then added the blended mixture back with the non-blended one. I also added a dash of cayenne pepper to give it a little kick.

Made this today as a trial run for Thanksgiving. We had a contractor over working outside and he told me I had him drooling over the wonderful aromas. Of course I sent him home with a sampling! Made it exactly as recipe and it came out wonderful. Ina never let's us down!

Delicious.
I used 3/4 cup of half and half and 1/4 cup of cream....consistency was perfect.
Also, I wanted a smoother soup--so I used my handheld blender as a final step. I would highlight recommend doing this if you have one of those handheld blenders.
Will make this again.

Two suggested changes for variation. First, I included the vegetables from the stock, minus the thyme sprig. It gives the soup a more rustic consistency. Second, I skipped the Half and Half and used only the heavy cream. I found the result delicious and less heavy.

I make this soup several time during cold season for the last few years. I do not change a single thing about it and it is Excellent!!!

I have never given an "Ina Recipe" any lower than 5 stars.... until now. I followed this recipe exactly, and it had absolutely no mushroom flavor at all. The addition of parsley at the end gave the soup a grassy taste. It did not look at all appetizing, rather anemic, actually. That being said, I took some of her good ideas and created my own (albeit more involved recipe that has won rave reviews from family & friends.

Holy cow! Amazing, rich, full bodied flavor just as Ina wrote it. I feel like Homer Simpson drooling over this! I used portobello, shiitake and oyster shroomies! YUMMY!!!!

Fabulous! I happened to have all of the ingredients on hand. I used sherry instead of white wine. This is THE BEST cream of mushroom soup EVER!!!! I am so proud of myself!!
