    This is the recipe my husband asks for the most. Also great with veal. I think it's basically a Milanese. The Parmesan name makes you think of gooey chicken parmigiana in restaurants, but it's light and crunchy. Good with or without the salad, but I do like the bit of lemon that adds. I think I could make it in my sleep. Just remember FEB.... Flour, eggs and breadcrumbs, in that order. Add your Parm. Good coating for just about anything. Thanks, Ina, for teaching me how to cook!

    Delicious! Simple! Tried it on my husband but will definitely prepare for company. Although I thought about the salad, I also prepared it with pasta. But I did cheat a little and use Prego's new vodka sauce. Yum! But do plan to try the salad next time.

    Excellent recipe. I followed it as is. I agree with Camielle (?. It could use a bit more salt. However, I didn't use the salad recipe and I think that combination would negate the need for more salt.

    Elegant and delicious! The lemon dressing on the spicy arugula is the perfect compliment to the comforting chicken. I used the perdue individually wrapped breasts and pounded them on the outside of their already packaged plastic. Worked great. My daughter loves to help press the chicken into the toppings. Fun, light, healthy! Thank you!
