    Not included in the written recipe here, but in this episode Ina also mentions keeping the chicken warm on a baking sheet in a 200 degree oven until you're ready for dinner (line with foil so there is no cleanup. I added this trick and it works great... also a great solution if you need to work in batches or prepare before guests come over.

    Bravo Ina - if only every FoodTV recipe was this good and easy to replicate!

    Parmesan Chicken was the perfect weeknight meal. Fast and relatively easy to prepare, this dish is big on flavor yet still has a light feeling as well. I would suggest you watch the temperature of your pan very close; too hot and the cheese will quickly burn, but too low and you won?t get a good crispy crust. Also, do not poke at the chicken too much when it is in the pan; the crust will come off. All in all, this was a hit! Will definitely make again. Paired it with Ina?s Sauteed Broccolini. Absolutely fantastic.

    This review is only for the chicken (however, I have made Ina's vinaigrette before and it is outstanding. This chicken is delicious - moist on the inside and crispy on the outside. I appreciated the tip for pounding the chicken flat. I found that it is important to use plenty of oil/fat in the pan and get the heat high enough to form the crust, but not burn the breadcrumbs/cheese.

    Ina, we were in hysterics watching the mystery guest today.. Mel Brooks is fantastic and so are you!

    I made the Parm Chicken tonight and it was outstanding, love how light it is when topped with greens. Thanks for another great one!

    I made this awhile back and my husband and I and we loved it. The salad with the lemon vinagrette was fantastic on top of the chicken. I served the chicken on skewers for my children and they loved it as well.

    I usually serve my parmesan chicken with marinara sauce. Made this way was absolutely delicious. The chicken was moist and had a great coating. I know the vinaigrette was simple, but it didn't taste like the other reviewers stated. I used what I thought was "good" olive oil and the ramaining ingredients. It just wasn't that good.

    This looks good; haven't tried it yet. But if it's like everything else of Ina's I've tried, it'll be a hit. But, this was such a fun show. Have Mel Brooks back!
