I loved these waffles! I serve them with rotisserie chicken and green beans. It's a healthier version of chicken and waffles! Yumm!

You need to top the waffles with Michael's Asparagus and leeks with pancetta and the egg en cocotte. You were right, you need another savory addition to the waffles and this is it. I've made it and it's great. I also added a simple hollandaise, but you don't have to.

I tried making these waffled for dinner tonight and although they were fluffy and looked great, they were just okay. I didn't see the episode these were from, so I'm not sure what he topped his waffles with, but I topped ours with a saute of caramelized onion, french green beans and prosciutto. Really seemed like they were missing a flavor component, but maybe they just need a different savory topping.

My husband and I enjoyed these very much. They were great with sauteed asparagus, leeks, and pancetta on top, served with poached eggs. As my husband said, "These are good enough for company!"

The ingredients sounded interesting espcially for waffles, but I tried the recipe for the first time this weekend and they are fantastic! It's a great way to get your family to eat heart-healthy beans and not fuss about it. The recipe can easily become a "sweet waffle" with some suger and vanilla if you want. I froze the extra and they warmed up great for a quick breakfast or mid-day snack.
