Outstanding! Best Mexican rice recipe I've ever found. Been making this for years. I do add another jalapeno because when it cooks down, it loses it's "heat", I also add more seasoning. Seriously, this is THE recipe for great Mexican rice. Warning: it does make a LOT of rice. Use your biggest, covered skillet. I also add frozen corn and sometimes top with cheese. You're gonna love it!

I make this recipe whenever I have a mexican meal. Everyone loves it. I use yellow, green, orange & red peppers for color (or whatever I have on hand I do have to add more broth to the recipe. I used 2 cans chicken broth another 1 cup or so. You will not be disappointed in this recipe.

I had to add another cup of chicken broth and bake it for about 45 mins, but it turned out soooo sooo good. I put some in my kid's scrambled eggs this morning and they ate it up! If you add some turkey polish sausage, it would be even better.

Although the rice is tasty, this is not how to make Mexican rice. I think this is an Americanized version of what it should be.

I loved all the fresh veggies. It made it authentic! When I made the essence I left out the thyme because our family doesn't like it. The spices were very spicy and I love spicy but it was a bit much. Next time I would only add 1 tsp. It also made a lot so next time I will half it and then add only 1/2 tsp of the seasoning. I have tried many other rices and this is the best yet. Thanks again!!! Deppens

I made this dish one night for a mini-fiesta I had with just the girls. I liked the idea that I could prepare it and then wait until they arrived to place it in the oven, which gave us time to chat and pour the wine. This enabled me to enjoy the party too! There were four of us and even though we chowed down, there was enough left over to send home for each of the guys to enjoy. I will definitely make this again and am considering adding shrimp to it next time.

Used 1 small can diced fire roasted mild green chilies instead of jalapenos, 1 can diced tomatoes with green chilies instead of fresh tomatoes. Liked all the flavors but little too spicy: next time for me, use 1 tbsp southwest essence instead of 2.

Very sinmple to prepare, while it is a little more time consuming than ripping the top off a box the results are worth it. I have made it twice now, the second time I doubled and added frozen corn and a bit of cheese on top before serving. Everybody loved it.
