    Very expensive dish to make, had to drive all over just to find the endive. I love beets, but this was a disaster, my guests wouldn't touch it and it ended up down the disposal. Very bitter and nasty, never again and won't recommend it

    I got hooked on Amy during the contest. I love her approach to cooking. A cut above the easy recipe approach, combined with the food knowledge of an Alton Brown. The beet and endive salad with the vinaigrette is fabulous -- a welcome addition to this holiday cooking season.

    I couldn't eat this on it's own, but it was pretty good on a piece of buttered toast. I don't like the tarragon in this.

    I used fresh roasted beets from Trader Joes. Big time saver. The dressing really makes the salad. The salad was still delicious the next day for lunch. Had this with the chicken. These are very accessible gourmet recipes.

    I couldn't believe how delicious this salad was! I do not like tarragon, so I simply left it out, and there was nothing missing to this simple and elegant salad. It was flavorful, colorful, easy to make, healthy, and looked beautiful on the plate. Next time I make it, I may add a bit of goat cheese. I think that will be a nice compliment to this dish.

    This was not only easy, but really, really good! My husband hates it when I try new salad recipes as he likes the traditional iceberg lettuce with onion, tomatoes and cukes. But he loved this salad as did I. And I like the fact that it is with vegetables I don't use very often. Thanks Amy!

    Easy to make, colorful on the plate and delicious. Made it as the salad course for dinner with friends and they really enjoyed it. Best with local ingredients - we're lucky enough to be down the road from a goat cheese farm!

    I followed the recipe exactly and the salad was so nasty and bitter that my family would not eat it. Very disappointed.
