I used veggie stock & all kale and the soup was delicious. i added extra garlic cloves & then some garlic powder at the end. Talk about yummy comfort food!

I made this soup for a holiday gathering and it was the most popular item on the menu. I used vegetable stock since my mother is vegetarian and it was perfect.

This is easy and great for those cold winter nights. I have substituted spinach for broccoli rab, (sometimes impossible to find!
