Because we have a family member who can't take cayenne, we substituted chili powder and cumin instead and boy oh boy was it great! Especially for roasting the thanksgiving turkey and making the stuffing.

I use this on chicken, all kinds of fish, egg salad, tuna salad... it just goes great with just about anything you want to add a little "zing" to!
Thanks, Emeril, for sharing your 'secret' with us!

I added this wonderful seasoning to a sweet and spicy italian sausage pasta with onions and peppers...I almost mimmicked a favorite NEW ORLEANS PASTA I love to eat at a local place.

I try to keep a container of this seasoning in the cupboard at all times! I love a little spice in just about anything and this combination provides it. I use it as a substitute of packaged "mixes" when seasoning meats for Mexican dishes, BBQ, ribs and lots of other things.
