    My family loved this recipe. It is easy, inexpensive and is even better the next day. This recipe is now in my recipe file to make again.

    I haven't made black eyed peas in some time, so I went to Food Network for ideas. I found this one and by jove it is perfect. Just the right amount of heat from the cayenne. I didn't have any smoked sausage handy but I found a ham bone in my freezer from a few Sunday's back. I added a 1/4 teaspoon of liquid smoke to get that smokey flavor. Truly delicious Emeril!

    I must admit, I was not excited about the recipe. I have never had black-eyed peas and sausage together and it didn't sound very appealing to me but I made it anyway. This recipe is awesome, it is the perfect comfort food. One of the best recipes I have tried off the food network so far. If you like southern comfort food, this is a winner.

    I don't usually comment on recipes but this was fabulous! I've struggled for several years trying to find a good black-eyed pea recipe to bring luck in the New Year. I failed miserably until this year. This was a huge hit not only with my husband, but also my parents and 7 year old daughter! Thanks Emeril! One note - I happened to have homemade smoked chicken broth so I used it instead of purchased - excellent!

    My sisters husband is Caucasian and advised he heard soulfood blackeye peas were the bomb. He taste my sisters (African American style as opposed to his moms and said his moms was better but he didn't like them altogether.

    Now we all know prepared right they are the bomb, so I went in search of that special recipe and found it. Today he asked when I was going to make some more because I still had the smoked sausage frozen in the freezer. All I can say is SHOW U RIGHT!

    My teenage daughter said she loved this, it is the first time she has ever tasted black eyed peas that had flavor to them. It is a hearty dish. I think a New Years day tradition has formed.
