    A hit!!! Don't short change yourself by using prepared mashed potatoes. The deeper flavor of a real baked russet and the beautiful way the potato skins form a "crust" underneath the potato filling is worth the extra time and work. As written, it seems that that there are too many potato skins. I used that to my advantage and formed a side crust as well as a bottom crust. It made for a beautiful presentation on our Christmas party buffet table last evening. Also, sorry Emeril, I substituted a few things to bring the fat content down! We reduced the amount of cheese, used half and half, and subbed-in no fat greek yogurt for the sour cream. I used a little MORE green onions than written . . . and I did NOT skimp on the bacon. Not everything can be low fat! Our 14 dinner party guests wiped our TWO full casseroles of this marvelous dish. This will be a holiday classic in our house for years to come.

    LOVE THIS. I STARTED THIS 4 YEARS AGO WHEN LOOKING FOR TWICE BAKED POTATOES.IT WAS SUCH A BIG HIT THAT I USE IT EVERY CHRISTMAS OR SPECIAL OCCASION DINNERS.

    I DID SHORTEN IT BY MAKING REGULAR MASHED POTATOES AND ADDING EVERYTHING TO IT. TOOK 1 HOUR OFF THE COOKING TIME.

    Very good! Cut the recipe down to a third (only 3 of us! We missed the potato skins, that was the only downfall.

    These were wonderful! I didn't change anything except 2 eggs since that's all I had. I will be making this for my prime rib on Christmas.

    This is a wonderful recipe. The best part is it can be prepared the day before. Then all you need to do is bake it the day of. It is always a huge hit and everyone will ask for the recipe.

    Absolutely delicious! Family and friends rave and I have to share recipe everytime I serve it! I also add pepper jack cheese instead of using all cheddar cheese. Gives it a little kick that my family loves.

    I made this last thursday for my boyfriends dinner party and goodness was it a hit. Not only were people going back for seconds, everyone insisted that I give them the recipe. This is definitely replace my normal mashed potatoes dish. Thank you so much Emeril for sharing this with us!!
