I wish I had read the reviews before shopping and making this dish. When I looked in the oven and realized it looked like there was not enough sauce, I poured some cream over it. Next time I will definitely double the sauce. However, the sauce is great anyway!

I found it a bit dry also.... I made a second time and added 1/2 cup of sour creme and a 1/2 cup of 1/2 n 1/2. Came out perfect. Play with it.... have fun. I made it with my kids. It was a nice time for a memory that will last a life time.

    Thanks Emeril

Made this dish when it first came out. The only thing I did was double the amount of sauce for the noodles. Later, I added some smoked bacon bits on top...yummy. Its an excellent starter side. Just let your imagination play with it.

This was a wonderful start - however it was drier than I like, so when I reheated ithe mac and cheese I made another batch of the gouda sauce and placed the left over over the sauce - aded breadcrumbs with fresh rosemary and reheated!
    now that was just PERFECT!!!!

It was very dry. I added another cup of milk and some more gouda, cheddar, garlic and ham. For a pound of pasta you definately need more than 1/4 pound of any kind of cheese.

Not sure if I did something wrong but it was very dry and lacked flavor. I will not make this again.

Unfortunately, this mac and cheese came out extremely dry. And although, smoked gouda cheese has strong flavor, I could hardly taste any cheese at all. Maybe double up on quantity.

This mac & cheese is different from the ordinary, but in a good way! Would be yummy served with ham on the side or diced in the recipe - I'm going to try that next time. Very good flavor.

This dish, as I call it...Flavor of Love, is the BEST mac & cheese recipe I've ever reproduced. Emeril has never let me down
