instead of adding sesame seed oil to the pan try veg oil and ten toss. then add sesame seed oil when you add the soy sauce.

I followed the recipe (except for the mushrooms, but the dish was rather bland. I had to add a lot more soy sauce than the recipe suggests, but it still didn't taste right.

...but had to make modifications to suit taste. (i.e. more soy sauce, sesame oil, less sugar, used shitake mushrooms instead of wood ear. i'm korean but my mother never cooked when i was growing up, so i am left to fend for myself when it comes to korean food. :P this is as close to the "real japchae" as you're going to get, short of eating at a korean restaurant!!! wonderful.

I thought the recipe was generally helpful in identifying ingredients and outlining the order of addition. I used sweet potato noodles, but couldn't replicate the flavors I am used to, despite adding more soy sauce and sugar and sesame oil. I finally added some red pepper flakes, which added some punch- but I still felt something missing overall.
