this is not a salad, it is an appetizer served on crostini or a small slice of the french bread.

My vegetable bin was pretty dismal after the Thanksgiving holiday, but i had all the ingredients on hand for this salad. Oh my, it was so wonderful. I love roasted peppers and loved this easy to mix up recipe.

Amy was right on when she said this was something that you can throw together and forget. It matched the Moroccan chicked perfectly. Definite winner!! Amy Finley always has wonderful recipes that I just love and makes everyone think that I am a major Gourmet!! Thanks Amy!

Love this...easy, off the shelf ingredients, fast. Jsut need the peppers in pantry for a quick, last minute idea, when the lettuce in the bin is wilted!
