    So easy and so yummy!! I used fresh tomato instead of dried one for the quesadillas and still works.

    This was a delicious dish! I didn't feel like fussing with a pork loin so I substituted some chopped bacon slices instead and just used a little extra rice. Also used sundried tomato spread. The orange salsa was delicious! Very colorful and flavorful dish. I think this would also taste great vegetarian. Will make again!

    Good taste and easy prep. One of my son-in-laws used pita bread. We all tried and enjoyed as well. Have fun!

    I thought this recipe was fabulous, but I added some queso fresco and cheddar cheese for a gooey-er version, as well as a can of corn. In the end, I had a bunch left over and froze it in pre-portioned bags to make even quicker meals for the future! They worked wonderfully out of the freezer, and I had 3 meals for the work of one in the end.

    This recipe is great! Last week, I made it with the leftover porkloin. My family loved it! This week, I used leftover rice from last night's dinner and made a vegetarian version. The orange salsa is the key. It is so good and pairs with the quesadilla perfectly. I would highly recommend making a double batch of the salsa, as everyone will want more of it.

    This was great!!! I used left over peppered pork loin and it was wonderful. The only thing I did different was do more cilantro...as we love the stuff. If any one is interested, I posted a picture on allrecipes.com. My user name there is mommyluvs2cook. Thanks Robin...this is a keeper
