    Our family are in love with this recipe too. We did our Christmas Turkey following this recipe, cooking it in the BBQ (using it as a oven and it turned out lovely and juicy! Everyone commented on the aroma. Since then I have used the recipe many times but substituted a gammon ham for the turkey, again in the BBQ. People enjoy it so much they can't stop eating it, so even if I get a gammon that seems way too big, it all gets eaten!

    Wow, just finished eating it....Best Turkey I have ever tasted, loved by all the family, will def. be doing this every Christmas, so easy, please dont be put off by the preparations, once you have all the ingredients out it is so simple and so worth it.

    Anyone who tries this turkey will be wowed. It seems like a lot when you look at the ingredient list for the brine but it seriously assembles in five minutes flat and you're done. Tomorrow will be my third time making a turkey this way -- I won't do a turkey any other way. For those who asked about using the drippings -- NO!! -- you cannot use them to make traditional gravy and even Nigella tells you as much. She says to use a very small amount for her allspice gravy which I didn't care for. Instead I make a small turkey breast in advance and make my gravy from that instead. Remember to augment the recipe for bigger birds. Enjoy the turkey and the heaping praise that will be served up with it! Happy Thanksgiving!

    Dundalkphil - I have made this twice and each time I did not use the juices to make gravy for the same reason you're questioning it.

    My first turkey I have ever made and used this recipe. I would recommend to amateurs such as myself to constantly add water to the bottom of the pan since the glaze dries up very very fast. This was something that may be well known to other cooks, but I was not aware of this I was just trying to follow the recipe exactly. Other than that, I have had RAVE reviews about my turkey using this recipe. I will never use another recipe ever! I am only 25 and my family and my husbands family insist on me having Thanksgiving every year now because of how good the turkey was!
